Vegan Chocolate Cake

Vegan Chocolate Cake
Wet Ingredients
  1. ½ cup vegetable oil
  2. 1 cup cold water
  3. 2 tbsp apple cider vinegar
  4. 2 tsp vanilla extract
Dry Ingredients
  1. 1 ½ cups unbleached white flour
  2. ½ cup unsweetened cocoa powder
  3. 1 cup organic sugar
  4. 1 tsp baking soda
  5. ½ tsp salt
  1. 1. Preheat oven to 375°.
  2. 2. In a 9-inch round or 8-inch square baking pan, apply a generous amount of oil and flour to the parchment paper. If not planning to transfer your cake to another dish, the parchment paper is not necessary. If baking cupcakes, prepare pan(s) with liners or cooking spray.
  3. 3. With electric mixer on medium speed or a whisk, mix all wet ingredients, except the apple cider vinegar, until smooth.
  4. 4. In a separate bowl, sift dry ingredients together until evenly mixed.
  5. 5. Add dry ingredients to wet ingredients and mix until smooth
  6. 6. Add the apple cider vinegar and stir quickly until evenly distributed throughout the batter.
  7. 7. Pour the batter in the prepared pan(s), and bake for approximately 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. 8. Once cooled, top with a frosting of your choice*, or enjoy with a light dusting of organic confectioners’ sugar.
  1. *We chose Pillsbury Cream Cheese frosting for our topping, which is unexpectedly vegan. There are several other frostings to choose from that offer vegan choices, but always check the ingredients to be sure.
